Your favorite chocolate cookies just got the perfect summer upgrade. You will never want store-bought ice cream sandwiches again. The hardest part of making these sweet treats, is waiting for the gooey chocolate cookies to cool before digging in.

  • 1 ΒΌ C. butter, softened
  • 2 C. sugar
  • 2 eggs
  • 1 1/2 T. vanilla extract
  • 3/4 C. cocoa powder
  • 2 C. all-purpose flour
  • 1 T. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3 -4 C. Vanilla Ice Cream
  • Chocolate sprinkles

In a mixing bowl, cream together the butter and sugar. Mix in the eggs and vanilla and stir until well blended. Mix in the remaining dry ingredients and stir well.
Refrigerate the dough for one hour. Roll the dough into tablespoon-sized balls and place on a parchment covered baking sheet. Bake the cookies for 10 min, and then place on a rack to cool.
Once the cookies are done, place 1/4 C. of the ice cream on a cookie and sandwich it with another. Coat each sandwich with sprinkles. For best results, place the cookies in the freezer while you prepare the remaining cookie sandwiches.
