  • 1 C instant rice (Jasmine/Basmati/Arborio)
  • 2 C milk (Almond milk works as well)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 2 tbs unsweetened cocoa powder (add more if desired)
  • 1/4 C honey
  • Salt

In a saucepan, bring the rice and 1/2 C milk to boil. When it starts to boil, bring it down to a simmer, close the lid and let it cook for 10-15 minutes or until rice is fully cooked.

Once the rice is done, add in the cocoa power and stir until the chocolate has combined well with the rice. Then gradually add the vanilla extract, ground cinnamon, honey and the remaining 1/2 C of milk. Keep stirring and the pudding will begin to thicken. If pudding becomes too thick, add a little more milk and stir.

When the desired consistency is reached, remove from heat and let the pudding set.

Pudding can be served hot or cold.

Scoop some into a serving glass, top it with a little whipping cream and sprinkle on some cinnamon powder and enjoy!
