Cinnamon-Maple Glazed Baby Carrots

  • 1 Tbs. margarine
  • 2 Tbs. pure maple syrup
  • 1/4 C. apple or orange juice
  • 1/2 tsp. ground cinnamon
  • dash of ground nutmeg
  • one 16-oz. bag baby carrots

Heat margarine, syrup, and juice in a skillet.  Sprinkle in cinnamon and nutmeg, then stir in carrots.  Cover and cook for about 10 to 15 minutes, until the carrots are tender but still crisp.  Uncover and cook over medium-high heat to allow liquid to thicken and glaze carrots (about 3 to 4 minutes).  Serve.
