Cinnamon Muffins
Ingredients
- 1/2 C. packed brown sugar
- 1/4 C. margarine
- 1 egg
- 3/4 C. DOLE® Pineapple Juice
- 1 tsp. grated orange peel
- 2 C. all-purpose flour
- 1-1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. vanilla extract
- 1/4 tsp. ground nutmeg
- 1 C. DOLE CinnaRaisins
Directions
Beat sugar and margarine until light and fluffy. Beat in egg, pineapple juice and orange peel. Combine remaining ingredients and stir into juice mixture just until moistened. Spoon batter into muffin cups coated with vegetable cooking spray. Bake at 375 F. for 15 minutes or until toothpick inserted comes out clean. Cool on wire rack and serve warm.
