  • 1 Kabocha squash
  • 3 T brown sugar
  • ¼ tsp ground nutmeg
  • ¼ tsp cinnamon
  • ½ tsp cumin
  • ¾ tsp sea salt
  • Raw sugar, for garnish
  • 1 ½ T honey .

First, preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Next, use a potato peeler or knife to remove the skin from the squash. Cut squash into slices and place in a plastic bag. Fill the bag with brown sugar, nutmeg, cinnamon, cumin, honey, and salt. Remove squash slices from bag and place on the baking sheet. Sprinkle the squash slices with the raw sugar and bake for 15 minutes. Halfway through the baking time, turn squash slices over and sprinkle with more sugar and bake for 15 minutes, keeping an eye on the squash to make sure it doesn’t burn.

Remove squash from oven and serve with your other favorite fall dishes.
