  • 2 C. flour
  • 1 C. sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • pinch of salt
  • ½ C. melted butter
  • 1 tsp. almond extract
  • 2 eggs
  • 1 C. diced and peeled apples
  • Streusel:
  • ⅓ C. packed brown sugar
  • 1 Tbs. flour
  • ⅛ tsp. cinnamon
  • 4 Tbs. cold butter (cubed)

Begin by preheating the oven to 375 degrees Fahrenheit. In a medium bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, and salt. In a separate large bowl, combine butter, vanilla, and eggs. Slowly add dry ingredients until stiff batter forms. Then fold in apples. Fill muffin cups 3/4 full. To prepare topping, mix brown sugar, flour, and cinnamon. Mix in to butter to form crumbs. Sprinkle over muffins. Bake for 15 to 20 minutes. Cool for a few minutes before removing from pan. Serve up and enjoy.
