Combine the yeast and 2 tablespoons white sugar with the milk and stir until well mixed. Let the mixture rest for 5 minutes. Mix the 3 ¼ cups flour and salt in a large bowl. Pour the yeast mixture and add the egg to the flour mix. Mix everything together and then transfer the dough to a surface dusted with flour. Knead the dough and then form a ball of dough. Dust a sheet of parchment paper with flour and place the dough ball on the paper. Refrigerate the dough.

While the dough is in the fridge, mix the butter and 2 tablespoons flour with an electronic mixer. Shape the butter mixture into a flat square on plastic wrap. Wrap the butter and refrigerate for 20 minutes. Then roll out the dough into a circle. Place the chilled block of butter in the center and fold the dough over the butter so that there is a square of dough wrapped around the butter. Flip the square over and flatten it with a rolling pin. Refrigerate for 20 minutes. Fold smaller and roll out again. Roll the dough very thinly and use circle cookie cutters to cut out 24 donuts.

Let the cronuts rise for 1 hour on a baking sheet in a warm location. Mix the sugar and cinnamon in a very large bowl and heat the oil a skillet over medium heat. Fry 2 cronuts at a time for 1 minute on each side. Transfer to paper towels to drain while you fry the remaining cronuts. Dip each cronut in the cinnamon-sugar mix.
