Cinnamon Yogurt Chicken

Ingredients
- 1/4 C. plain nonfat yogurt
- 1 tsp. olive oil
- 2 cloves garlic, minced
- 3/4 tsp. minced fresh ginger
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cumin
- 1/4 tsp. onion powder
- 1 tsp. red wine vinegar
- 1/4 tsp. kosher salt, optional
- ground pepper to taste
- one 8-oz. whole skinless, boneless chicken breast, cut in half
- cooking spray
Directions
Preheat broiler.
In a 2-cup measuring cup, whisk together yogurt, olive oil, garlic, ginger, cinnamon, cumin, onion powder, vinegar, salt and pepper. Place chicken breast halves in shallow nonreactive baking dish. Set aside 1 tablespoon of yogurt mixture and spoon the remaining mixture over the chicken, turning once to coat evenly. Set aside to marinate for 15 minutes.
Lightly coat a broiler pan with cooking spray. Place chicken, skin side down, on broiler pan. Broil 4 inches away from heat source for 10 to 12 minutes, until nicely browned. Turn, baste with reserved yogurt mixture and continue to broil until breasts are done, about 5 minutes.
