Citrus Fennel Salad

Ingredients
- 2 lg. oranges, peeled and cut into cross-wise slices
- 1 med. fennel bulb, trimmed and thinly sliced
- 1/2 red onion, thinly sliced
- 12 black olives
- 3 Tbs. olive oil
- salt
- 2 Tbs. chopped mint
Directions
Arrange orange slices alternately on a plate with the fennel. Scatter olives and onion over top. Drizzle with salt and olive oil, then sprinkle with mint. Serve.
