Ingredients

  • 1 lb. beef tenderloin
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. paprika
  • 1/4 C. extra virgin olive oil
  • 1/4 C. olive oil
  • 1/4 C. lemon juice
  • 1/4 C. orange juice
  • 2 tsp. paprika
  • 2 cloves garlic, minced
  • 1 tsp. hot pepper sauce
  • 2 tsp. fresh parsley, chopped
  • 2 tsp. fresh rosemary, finely chopped
  • 2 lb. crab
  • 8 14" springs of fresh rosemary
  • Sauce:
  • 2 Tbs. honey
  • 1 tsp. orange zest
  • 1/3 C. fresh orange juice

Season steak with salt, pepper and paprika. Set aside and prepare crab. Combine olive oil, lemon and orange juices, paprika, garlic, hot sauce, chopped rosemary, parsley, salt and pepper in a small bowl and whisk together. Add crab, toss and let stand at room temperature about 30 minutes. Hold rosemary sprigs and strip the leaves off of the bottom 3/4ths of the sprigs and soak in cold water for the same 30 minutes as your crab.

Drain off crab marinade and discard. Mix sauce ingredients in a small bowl. Grill steak and crab on grill for about 6 to 7 minutes or until crab looks ready. Baste cooked side with orange honey sauce and turn. Cook for 5 to 6 minutes.
