I actually came up with this recipe while trying to create a sweet potato dish for our baby girl, Kaia. She just loves sweet potatoes and it's necessary to create a variety of dishes using them. I do use traditional sweet potatoes, not yams. It wasn't until I began creating these dishes, using sweet potato, before I learned that there was actually a sweet potato, other than a yam. Now we all have grown to love and eat sweet potatoes quite often. I will be making this as a side dish for Thanksgiving this year.

  • 4 C. water, for boiling
  • 6 sweet potatoes, peeled and cubed
  • 1/2 C. orange juice
  • 1/4 C. heavy cream
  • 1 tsp. orange zest
  • 1/2 tsp. ground nutmeg
  • 1/8 tsp. salt

In a large pot, bring water to a boil and add sweet potaotes and let cook 15-20 minutes, or until fork tender. Drain sweet potatoes and return to same pot. Using a hand-held mixer, add the rest of the ingredients and mix until fluffy. Reheat if necessary and serve immediately.
