Citrus-Stuffed Roasted Chicken with Potatoes

Ingredients
- 2 boneless, skinless chicken breasts
- 1 Tbs. minced garlic
- 1 Tbs. vegetable oil
- 1 orange, quartered
- 1 lemon, quartered
- 4 slices bacon
- 4 toothpicks
- 1 lb potatoes, served any style

Preheat oven to 375 degrees. Butterfly each chicken breast and season each side with desired seasonings. With a mallet, pound the chicken breast to desired thickness. Set aside. In large skillet heat oil, add orange, lemon, minced garlic and bacon. Remove from heat. Stuff each chicken breast with mixture, with the exception of bacon. Roll the chicken up and wrap in bacon. Stick with toothpicks to hold bacon on. Bake on cookie sheet at 375 degrees for 35-45 minutes. Turn up heat to 400 degrees and bake for an additional 10-15 minutes or until bacon is browned. Remove toothpicks, slice chicken and serve. Serve with potatoes.
