  • 1 cup of sliced bananas
  • 1 tablespoon of vanilla
  • 2 eggs
  • 1/3 cup of mashed bananas
  • ¼ cup of white sugar
  • 1/3 cup of flour
  • ¼ a cup of melted butter
  • a pinch of salt
  • 1/3 cup of brown sugar
  • 1 teaspoon of baking powder
  • ½ cup of fat free milk
  • 1/3 cup of oil
  • cooking spray for the baking pan

Preheat the oven to 350 degrees. Then, generously grease a 9-inch pan with cooking spray.
In a bowl, combine the mashed bananas, white sugar, flour, vanilla, eggs, baking powder, oil and salt. Mix well together.
To form the banana topping, mix the melted butter and brown sugar together, then pour into the bottom of the baking pan. Then, arrange the banana slices in one layer at the bottom of the pan.
Pour the batter on top of the sliced bananas, and bake for 45 minutes, or until a toothpick can be cleanly inserted and removed from the cake without any crumbs attached.
Take the cake out of the oven and let it cool for about 5 minutes, then flip the pan over onto a large serving plate.
