  • 4 large eggs
  • 2 T. milk
  • 1/2 tsp. kosher salt
  • dash of ground black pepper
  • 1 tsp. butter
  • 8 T. shredded cheddar cheese, divided
  • 4 flour tortillas, heated
  • 8 T. chopped tomato, divided

In a medium bowl, whisk together eggs, milk, salt, and pepper. In a nonstick skillet, melt butter over medium heat and add egg mixture. Stir to scramble. Distribute eggs evenly on each tortilla. Sprinkle each with two tablespoons of cheese and tomato. Roll up into burrito form and serve.
