  • 1 1/2 lb. boneless skinless chicken breasts
  • 2 C. chopped carrots
  • 1 medium yellow onion, diced
  • 1 C. chopped celery
  • 3 cloves garlic, minced
  • 3 Tbsp. olive oil
  • 1/4 tsp. dried thyme
  • 1 bay leaf
  • 6 C. chicken broth
  • 1 C. water
  • Salt and black pepper, to taste
  • 2 C. uncooked wide egg noodles

Place the whole chicken on the bottom of a crockpot and top wit the carrots, onion, celery, garlic, olive oil, thyme, and bay leaf. Add the chicken broth, water, and season with salt and pepper. Cover and cook on low for 7 hours. Once the chicken is cooked, remove them and cut into pieces. Add back to the crockpot along with the noodles. Cover and cook another 10 minutes until the noodles are tender.
