  • 1 1/2 lbs. boneless skinless chicken breasts, cut into bite-size chunks
  • 1 box white rice
  • 2 T. coconut oil
  • 1 white onion, chopped
  • 4 cloves fresh garlic, minced
  • 2" fresh ginger, minced
  • 1 28 oz. can of tomato puree
  • 2 T. ground turmeric
  • 2 T. ground cumin
  • 2 T. garam masala
  • 1/2 T. cayenne pepper
  • 1 cup Greek yogurt
  • salt
  • Cilantro

Saute onions in oil in a large pot. Place over medium heat until the onions have caramelized. Add the garlic and ginger and cook for about one minute. Next, add the tomato puree, turmeric, cumin, garam masala, and cayenne pepper. Mix them and allow the mix to cook until the mixture is hot and bubbling.
Add the chicken and cook over low heat for about 20 minutes stirring every once in a while until chicken is cooked all the way. Prepare your rice according to the instructions on the box.
Lastly, stir in your yogurt--this causes the mix to turn a bright orange. Serve the final product over rice and top it off with a cilantro garnish.
