  • 1 head iceberg lettuce
  • 6 C. spring greens
  • 2 hard-boiled eggs, chopped
  • 2 large tomatoes, chopped
  • 2 avocados, peeled, pitted and diced
  • 2 C. cheddar cheese, grated
  • 1 Tbs. dressing
  • 1/3 C. bacon bits
  • Roast Chicken:
  • 2 skinless, boneless chicken breast halves
  • 1/4 C. chopped sun-dried tomatoes packed in oil, well drained
  • 1/4 C. packed chopped fresh basil leaves
  • 1 Tbs. olive oil
  • 1/4 tsp. freshly ground pepper

Roasted Chicken:

Start making your chicken by preheat the oven to 425 degrees. Prepare a shallow baking dish with olive oil-flavored non stick pan spray. Pound the chicken breasts to 1/4-inch thickness. Combine the tomatoes and basil in a small bowl. Spread the tomato mixture evenly over the chicken breasts; in the prepared baking dish. Bake until golden brown. Chop your chicken for the salad once cooled.

Cobb Salad:

Mix all ingredietns together to make the perfect cobb salad.
