  • 1 ½ C. + 2 T. biscuit mix, divided
  • 2 eggs
  • ¾ C. sugar
  • 1 ½ tsp. vanilla extract
  • 1 tsp. brewed coffee
  • ½ C. yogurt
  • ¼ C. brown sugar
  • 1 ½ tsp. cinnamon

In a large bowl, mix together 1 ½ cup of biscuit mix, eggs, sugar, vanilla, coffee, and yogurt. In a separate bowl, combine 2 tablespoons of biscuit mix, brown sugar, and cinnamon. In your greased crockpot, pour in half of your batter, sprinkle in streusel, and top with remaining batter. Cook on high for 1 ½ to 2 hours until an inserted knife comes out clean. Top with a dusting of powdered sugar and serve!
