  • 2 lbs chicken pieces
  • 4 eggs
  • 1/3 C. water
  • ½ C. hot sauce
  • 1 ¼ tsp salt
  • ¾ tsp. pepper
  • ¼ tsp. garlic powder
  • 2 C. flour
  • 1 T. baking powder
  • Oil for frying

In a medium bowl, beat together the eggs, water, and hot sauce, then pour the mixture into a large sealable bag. In a small bowl, add 1 teaspoon of salt, pepper, and garlic powder. In a separate bowl, whisk together the flour, baking powder, and ¼ teaspoon of salt. Rinse and dry the chicken piece, then sprinkle both sides of all pieces with the garlic powder blend. Drop the pieces into the bag with the egg mixture, and move around to make the pieces are well-coated. Next, roll the pieces of chicken into the flour mixture, making sure to coat well. Drop the chicken pieces, a few at a time, into frying oil heated to 350 degrees, and fry until crisp and brown. Drain on paper towels and allow to cool slightly before serving.
