  • 1/2 C. butter or margarine, softened
  • 1 C. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/2 C. flour
  • 1/2 C. cocoa
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 C. sour milk
  • 1/2 C. hot water
  • Store bought mint frosting

In a mixing bow, mix together the butter and sugar. Add egg and vanilla. Combine dry ingredients; add to the creamed mixture alternately with milk and water. Mix well. Fill paper-lined muffin C. 2/3 full. Bake at 375 degrees for 12-15 minutes or until a toothpick comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. Finish off your cupcakes with store bought mint frosting.
