  • Vegetable oil with flashpoint over 375º.
  • 1/2 C flour
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 3/4 C beer
  • 1 3/4 lb potato

  • Deep-Fry Thermometer

Fill a thick cast-iron skillet equipped with a deep-fry thermometer halfway with oil, and heat oil to 375 degrees F.

Form batter by whisking flour, chili powder, garlic powder, smoked paprika, salt and beer together in a large bowl, then cut potatoes into curly fires using a curly-fry cutter.

Dredge potatoes in batter, and then fry in the pot until crisp for 6 to 7 minutes. Drain fries on paper towels, sprinkle with salt and pepper, then serve.
