These cookies are so delicious, they don't even need any frosting. If you want to decorate them, sprinkle them with sanding sugar and food coloring. For the more ambitious bakers, you can pipe frosting onto them, too.

  • 3 C. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 C. butter, softened
  • 1 1/2 C. sugar
  • 1 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 2 eggs

In a bowl, combine the flour, baking powder, and salt. Mix well and set aside. In another bowl, cream the butter and sugar until light and fluffy. Beat the eggs in one at time and then mix in the vanilla. Slowly beat the flour mixture into the creamed mixture until the two are completely combined. Separate the dough into two disks, wrap in plastic wrap, and refrigerate for at least 2 hours.

Preheat the oven to 400 degrees. On a floured surface, roll out one disc at a time to a 1/4-in. thickness. Cut out the shapes using cookie cutters and bake for 6 to 8 minutes. Remove the cookies from the oven and cool completely on wire racks.
