  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1 can diced tomatoes, drained
  • 1 box refrigerated pie crusts, softened
  • 3/4 C. shredded Monterey Jack cheese
  • 1 egg, beaten

Preheat the oven to 400 degrees. Meanwhile, brown the beef and onion over medium high until the meat is no longer pink. Mix in the chili powder, salt, and tomatoes. Remove from the heat. Unroll the pie crusts on a cookie sheet and spoon 2 cups of the beef mixture on each half. Top with the cheese. Brush the crusts with egg and fold them over. Seal with a fork and cut slits for steam. Bake for 25 minutes until golden brown and serve in wedges.
