  • 2 Tbsp. canola oil
  • 2 Tbsp. flour
  • 1 can enchilada sauce
  • 2 C. chicken broth
  • 1 tsp. salt, divided
  • 1/2 tsp. black pepper
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 10 corn tortillas
  • 2 cans diced green chilies
  • 3 C. grated sharp Cheddar cheese
  • Cilantro, for garnish

Combine the oil and flour in a saucepan. Stir together and cook for 1 minute on medium low. Add the enchilada sauce, broth, 1/2 teaspoon salt, and pepper. Bring to a boil then reduce the heat. Simmer for about 10 minutes. Meanwhile, brown the beef and onions in a skillet over medium. Drain and season with the remaining salt. Set aside. Preheat the oven to 350 degrees. Spread 1/2 cup of the sauce in the bottom of a casserole dish. Dip each tortilla in the sauce and place on a plate. Add some meat mixture and chilies to each tortilla. Top with some cheese and roll them up. Put the tortillas in a baking dish and pour the rest of the sauce on top. Sprinkle on the remaining cheese. Bake 20 minutes until bubbling. Garnish with cilantro before serving.
