  • 4 large carrots, cut into chunks
  • 3 celery stalks, chopped
  • 1 onion, chopped
  • 2 lbs. potatoes, peeled and cut into cubes
  • 2 T. olive oil
  • 3 cloves garlic, minced
  • 1 lb. beef stew meat
  • ¼ C. flour
  • 2 C. beef broth
  • 2 T. mustard
  • 1 T. Worcestershire
  • 1 T. soy sauce
  • ½ T. brown sugar
  • ½ T. rosemary
  • ½ tsp. thyme

Put the onion, carrots, celery, and potatoes into your slow cooker. Season the meat with salt, pepper, and the flour, making sure to coat the meat evenly. Saute the garlic and olive oil in a skillet over medium heat, then add the floured meat, allowing the beef to cook for a few minutes to brown. Add the browned meat into the crockpot and stir. Add in the broth, mustard, Worcestershire, soy sauce, brown sugar, rosemary, and thyme into the crockpot as well and stir well. Cover and cook on high for 4 hours, on on low for 8 hours.
