  • 1 C. flour
  • 2 tsp. baking powder
  • 1/4 c. sugar
  • 1 C. milk
  • 1 egg
  • 2 T. oil
  • pinch of salt
  • 1/2 tsp. vanilla

Whisk together the flour baking powder, and sugar in a large bowl. In a small bowl, whisk together the milk, egg, and oil. Pour the liquid ingredients into the dry, and stir until just combined. Heat a skillet over medium heat, and grease lightly. Use about 1/4 C. of batter per pancake and cook until bubbles begin to form on top, then flip.
