Ingredients

  • 1 C. long grain rice, uncooked
  • 2 C. water
  • 2 eggs
  • 3 Tbs. butter
  • 1/2 C. frozen peas
  • 1/2 C. frozen carrots
  • 2 Tbs. soy sauce
  • 1/4 tsp. sesame oil
  • 1 green onion, diced

Directions

Pour water into saucepan over stove. Stir in rice. Reduce heat to low simmer and let rice sit for 15 minutes. Place cooked rice in bowl. In a separate bowl, stir eggs with 1 Tbs. butter until fully beaten. Scramble eggs in skillet over stove until ready. Mix scrambed eggs with vegetables. Melt 2 Tbs. butter in skillet. Add rice mixture. Stir and saute for 2 minutes. Mix soy sauce and sesame oil in cup before mixing with rice. Cook rice for 6 to 7 minutes. Place in a large serving bowl and garnish with green onions.
