  • 2 T. unsalted butter
  • 1 C. onion, finely chopped
  • 1 celery rib, finely chopped
  • 1 large carrot, finely chopped
  • 1/2 C. green onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 2 tsp. Worcestershire sauce
  • 2/3 C. ketchup, divided
  • 1 1/2 lb. ground chuck
  • 3/4 lb. spicy ground pork sausage
  • 1 C. breadcrumbs
  • 2 large eggs, beaten
  • 1/3 C. parsley, minced

Preheat your oven to 350°F. In a large skillet, melt butter. Add onions, celery, carrot, green onions, and garlic and sauté for five minutes. Cover and cook for an additional five minutes. Season with salt and pepper. Pour 1/3-cup of ketchup and Worcestershire sauce into the vegetable mixture. Cook for one minute and remove from heat. In a large bowl, combine meats, eggs, breadcrumbs, parsley, and cooked vegetables. Once mixture is well combined, form into a loaf and transfer to a loaf pan. Cover with remaining ketchup and bake for one hour. Remove and let stand for 10 minutes before serving.
