  • 3 C. whipping cream
  • 1 C. granulated sugar
  • 1/2 tsp. grated lemon peel
  • 6 large egg yolks
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 4 tsp. brown sugar

Preheat oven 325 degrees F. Mix cream and lemon peel in heavy small saucepan and bring to a simmer. In large bowl, beat sugar and yolks until thick. Slowly whisk in hot cream mixture, then vanilla and salt. Let it sit for 10 minutes. Strain custard, then pour in top pan. Pour enough hot water into bottom baking pan to come halfway up. Bake for about 50 to 55 minutes. Remove custards from water bath. Chill until firm. Preheat broiler. Place custard on baking sheet. Strain brown sugar through small sieve onto custard. Broil until sugar melts and brown. Chill until topping is hard and crisp.
