  • 1 tsp. olive oil
  • 1 3 lb. boneless chuck roast, trimmed
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 C coarsely chopped onion
  • 1 C dry red wine
  • 3 garlic cloves, chopped
  • 1 can beef broth
  • 1 bay leaf
  • 4 large carrots, peeled, cut into 1-inch pieces

Preheat oven to 350ยบ.

Rub , oil, salt and pepper on all sides of roast.

Place roast on baking dish and surround with onions. Add the red wine, chopped garlic, beef broth and bay leaf to pan. Bake for 1 1/2 hours, or until the roast is almost tender.

Add carrots to dish. Cover and bake an additional 1 hour.

Cut meat and serve warm.
