Ingredients
- 1 Tbs olive oil
- 4 onions, chopped
- 6 cloves garlic, minced
- 5 small carrots, sliced
- 6 C vegetable broth
- 2 C green lentils
- 2 large potatoes, chopped
- 1 tsp dried oregano
- 1 tsp dried coriander
- 1/4 tsp cayenne pepper
- sea salt and pepper
- 1 tsp white vinegar

Directions
Warm the olive oil in large saucepan over medium heat. Add onions, garlic, and carrots. Cover, cook and stir until the onions have softened for 10 minutes.
Add broth, lentils, potatoes, oregano, coriander, and cayenne. Turn heat to high and bring pan to boil. Reduce heat to low, cover and simmer for 30 more minutes or until lentils and potatoes are cooked through.
Season with salt, pepper, and vinegar. Place in bowl and serve.
