  • 3 Tbs. Butter
  • 3 Tbs. All-Purpose Flour
  • 3 Tbs. Prepared Mustard
  • 3 C. 2% Milk
  • 1 tsp. Kosher Salt
  • 1/2 tsp. Ground Paprika
  • 1/4 tsp. Dried Thyme
  • Ground Black Pepper, to taste
  • 1 Egg
  • 12 oz. Shredded Sharp Cheddar Cheese
  • 1 C. Elbow Macaroni, cooked al dente and drained

Preheat oven to 350 degrees. Melt the butter in a large saucepan over medium-high heat. Whisk in the flour and mustard, stirring continuously for five minutes until smooth. Stir in the milk, salt, paprika, thyme, and pepper. Let sauce simmer for ten minutes. Whisk in the egg until fully incorporated. Stir in 3/4 of the cheese. Fold the macaroni into the cheese mixture. Pour the macaroni and cheese into an 8x8" casserole dish. Sprinkle the remaining cheese on top. Bake for 30 minutes or until casserole is warmed through. Let dish sit five minutes before serving.
