  • 3 Tbs. Butter
  • 2 Tbs. All-Purpose Flour
  • 2 C. 2% Milk
  • 1 3/4 C. Shredded Sharp Cheddar Cheese, divided
  • 1/4 C. Shredded Parmesan Cheese
  • 2 C. Elbow Macaroni, cooked and drained

Preheat oven to 350 degrees. Lightly grease an 8" casserole dish with nonstick cooking spray. Melt the butter in a large saucepan over medium heat. Whisk in the flour until thickened. Gradually stir in the milk. Bring sauce to a boil over medium heat. Reduce heat to low and let sauce simmer until thickened, stirring continuously. In a medium bowl, combine 1 1/4 cups of the sharp cheddar and the parmesan cheese. Pour the cheese mixture into the saucepan. Cook and stir until cheese is fully melted. Stir in the elbow macaroni. Pour macaroni and cheese mixture into prepared casserole dish. Sprinkle remaining cheddar cheese on top. Bake for 20 minutes or until dish is heated through.
