  • 1 lb. macaroni noodles
  • 5 Tbsp. butter
  • 5 Tbsp. flour
  • 2 1/2 C. whole milk
  • 2 1/2 C. grated cheddar, divided
  • 1/2 tsp. salt
  • 1/4 tsp. mustard powder

Preheat the oven to 400 degrees. Boil the pasta in water until al dente and drain. Melt the butter in a saucepan over medium and add the flour. Stir until it forms a paste. Pour the milk into the paste while whisking until it is smooth and thickened. Stir for about 5 minutes while scraping the bottom. Add 2 cups of cheese slowly while stirring. Season with salt and mustard powder. Pour the sauce over the pasta and stir until coated. Transfer to the baking dish and top with the remaining cheese. Bake 15 minutes until the top is golden.
