Ingredients

  • 5 lb. potatoes,
  • 3/4 C. margarine
  • 4 oz. cream cheese, softened
  • 4 oz. sour cream
  • 1/2 C. heavy cream
  • 1/2 C. fresh dill, chopped
  • 1/2 C. parsley, chopped
  • Salt and pepper to taste
  • Gravy:
  • 1/2 C. onion, chopped
  • 1/2 C. mushrooms, chopped
  • 2 Tbs. fresh parsley, chopped
  • 2 C. chicken broth
  • 2 Tbs. corn starch

Directions

Peel potatoes and cut into 1-inch cubes. Boil in pot filled with hot water for about 20 minutes or until tender. Drain potatoes. Place them in a bowl and mash with remaining ingredients.

For gravy, saute onion, mushrooms and parsley in 1/4 C. broth with pan until tender. Pour in corn starch and 1/2 C. chicken broth. Stir until smooth. Add salt and pepper to taste. Pour remaining broth to pot. Bring to boil while stirring occasionally. Cook for 2 minutes.
