Ingredients

  • 2 ½ lb. chuck roast
  • 6 carrots, chopped
  • 1 can of diced tomatoes
  • 1 C. barley
  • 1 green pepper, chopped
  • 48 oz. beef stock
  • 5 springs of fresh thyme
  • 2 onions, chopped
  • 2 tsp. salt
  • 1 tsp. pepper

Directions

Add all of the ingredients into a slow cooker. Let it cook for 8-10 hours on a low setting. Make sure to keep an eye on it. Stir it every couple of hours. Serve with parsley if desired and enjoy.
