  • 2 lb. uncooked spaghetti noodles
  • 2 cans stewed tomatoes
  • 1 can tomato paste
  • 3 Tbsp. chopped parsley
  • 1 clove garlic, minced
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 6 Tbsp. olive oil
  • 1/3 C. finely diced onion
  • 1/2 C. white wine

Boil the pasta according to the directions and drain when al dente. Make the sauce by putting the tomatoes, tomato paste, parsley, garlic, oregano, salt, and pepper in the food processor. Blend until smooth. Heat oil in a large skillet over medium. Cook the onion for 2 minutes. Add the blended tomato sauce and white wine and simmer for 30 minutes. Serve over the spaghetti with Parmesan cheese.
