  • 1 T. olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 red bell peppers, chopped
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 2 (14 oz.) cans diced tomatoes, with juice
  • 1 (15 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 2 T. brown sugar
  • 2 T. chili powder
  • Dash cumin
  • Cheddar cheese for topping

In a large pot, heat oil and sauté onion and garlic until softened. Add in bell peppers and sauté for an additional 6 to 8 minutes until tender. Add in beans, tomatoes, tomato sauce, tomato pasta, brown sugar, chili powder, and cumin. Bring mixture to a boil, reduce heat, cover, and simmer for 20 to 30 minutes. Serve with cheese and preferred toppings.
