  • 3 C. long-grain rice
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 green pepper, chopped
  • 4 Tbs. olive oil
  • 1 tsp. cumin
  • 1/4 tsp. saffron
  • 1/4 tsp. paprika
  • 1 Tbs. butter
  • Salt and pepper to taste

Fill a saucepan with water. Bring to a boil. Pour rice and turn heat to low. Cover and cook for 20 minutes, or until rice is tender but firm. Drain and place rice into dish. Sauté vegetables with olive oil for about 5 minutes. Add spices and butter. Cook for 3-4 minutes or until fragrant. Combine onion mixture with rice mixture. Season with salt and pepper to taste.
