  • 1 (15 oz.) can sliced beets, drained
  • ¼ C. beet liquid reserved from can
  • 1 ¾ C. vegetable broth
  • 2 T. flour
  • 1 tsp. sugar
  • ¼ tsp. onion powder
  • Salt and pepper to taste
  • 2 T. lemon juice
  • ½ C. sour cream

Using a food processor, puree beets. In a pot, whisk together beet liquid, vegetable broth, flour, sugar, onion powder, salt, pepper, and lemon juice over medium heat. Bring mixture to a boil, reduce heat, and simmer for 2 to 3 minutes. Remove from heat, stir in beet puree and sour cream, and serve hot or cold.
