  • 6-8 slices of Italian bread
  • 8 oz fresh mozzarella
  • 16 oz of fresh cherry tomatoes
  • Olive Oil
  • Balsamic vinegar
  • Chopped basil leaves
  • Salt and pepper

Preheat oven to 350 degrees. Slice cherry tomatoes in half, drizzle with olive oil and balsamic vinegar and toss them to coat. Slice bread and lay slices on cookie sheet. Brush top of bread with olive oil and bake approximately 10 minutes. Top bread with slices of mozzarella, add tomatoes to the top, and return to the oven for 2-3 minutes. Remove from oven, drizzle with olive oil and basil leaves, sprinkle with salt and pepper.
