  • 2 ¼ cups of all-purpose flour
  • 2 teaspoons of ground ginger
  • 2 ½ teaspoon of ground cloves
  • ¾ teaspoon of ground cinnamon
  • ¼ teaspoon of salt
  • 1 teaspoon of baking soda
  • ¾ cup of unsalted butter
  • 1 cup of white sugar
  • 1 egg, beaten
  • 1 tablespoon of water
  • ¼ cup of light molasses
  • 2 tablespoons of white sugar

Preheat the oven at 350F.
In a large mixing bowl, sift together the all-purpose flour, baking soda, cinnamon, cloves, and salt.
In a separate mixing bowl, combine the unsalted butter and sugar until it is light and fluffy. Then, slowly add in the egg, water and light molasses. When the wet ingredients is nicely incorporated, combine them with the dry ingredients.
Optional: Leave the dough mixture in the refrigerator for 1 hour to firm it up.
Flour your hands and start shaping the dough into walnut sized balls. Roll them into the remaining 2 tablespoons of sugar.
Using a baking cookie sheet, place the parchment paper on the sheet. Place the cookies on the sheet and flatten them a little. Bake the cookies for 8-10 minutes.
Once the cookies are fully baked, allow them to cool on a wire rack for 5 minutes.
