  • 1 lb. potatoes, thinly sliced
  • 2 T. olive oil
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1/2 tsp. chili powder
  • 1 tsp. onion powder
  • 1 lb. chicken tenders
  • 1 C. all-purpose flour
  • 3 eggs
  • 1 T. season salt
  • 1/2 T. red pepper flakes
  • 1/2 T. black pepper
  • 1/4 C. milk
  • 2 C. canola oil

Preheat oven to 450°F. In a large bowl, place potato slices and drizzle with olive oil. Sprinkle with paprika, garlic, chili powder, and onion powder. Toss to combine. Transfer to a baking sheet in one layer and bake for 45 minutes. Heat oil until hot in a large skillet. In a shallow dish, mix together flour, seasoning salt, red pepper flakes, and black pepper. In another bowl, whisk together eggs with milk. Generously coat each chicken tender in flour mixture, dip in egg, and return to flour. Transfer to skillet and fry until golden brown. Serve with fries.
