An All-American salad has become the basis for a club sandwich. Stuff layers of hard-boiled egg, tomato, and lettuce between toasted bread, and drizzle with a sweet honey mustard dressing.

  • Sandwich
  • 4 Large Hard-Boiled Eggs
  • 1/4 C. Blue Cheese Salad Dressing
  • 12 slices White Bread, toasted
  • 2 Medium Tomatoes, sliced
  • 4 Large Lettuce Leaves
  • Dressing
  • 1 C. Nonfat Plain Greek Yogurt
  • 3 Tbs. Granulated Sugar
  • 3 Tbs. Honey
  • 1 1/2 Tbs. Yellow Mustard
  • 1 1/2 Tbs. Dijon Mustard
  • 1 1/2 Tbs. Lemon Juice
  • 1 1/2 Tbs. Olive Oil

In small bowl, mix together the eggs with the blue cheese dressing. Season with salt and pepper to taste. On 4 of the slices, evenly distribute the tomatoes, and top each tomato layer with a lettuce leaf. Spread 4 more bread slices with even amounts of the egg and blue cheese mixture. Place one egg-topped slice of bread egg-side-up atop each tomato-and-lettuce-topped slice. Top each sandwich with one of the remaining slices of bread.
Whisk all of the ingredients together in a medium bowl. Drizzle each sandwich with dressing before serving.
