Coconut Biscuits
Ingredients
- 2 C. all-purpose flour
- 3/4 C. coconut, toasted
- 2 Tbs. sugar
- 1 Tbs. baking powder
- 1/2 tsp. salt
- 1/3 C. shortening
- 1 C. milk
- 1/2 tsp. vanilla
Directions
In mixing bowl, stir together flour, coconut, sugar, baking powder, and salt. Cut in shortening until mixture resembles coarse crumbs. Combine milk and vanilla. Make a well in the center of dry ingredients; add milk mixture all at once. Stir until dough clings together. Use a knife or narrow spatula to push dough from a tablespoon onto a greased baking sheet. Bake in a 450-degree oven for 10-12 minutes or until biscuits are golden. Serve immediately.
