These fruity creamsicles are a sweet, fruity treat! This recipe can be made healthier by substituting the ice cream for Greek yogurt.

  • 1/3 C. vanilla ice cream, softened
  • 1/3 C. canned lite coconut milk
  • 1/2 tsp. vanilla extract
  • 3 tsp. honey, divided
  • 2 C. blueberries
  • 1/4 C. water

Combine ice cream, coconut milk, vanilla, and 1 tsp. honey in a bowl. Mix well. Pour the ice cream mixture into ice pop molds and freeze for at least 2 hours, or until partially set. Place the blueberries, water, and 2 tsp. honey in a blender. Blend until smooth. Slowly pour the blueberry mixture into the molds and freeze for at least 4 hours, or until set.
