Ingredients

  • 2 C. all-purpose flour
  • 1 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/3 C. granulated sugar
  • 1/4 tsp. baking soda
  • 2/3 C. vegetable oil
  • 2/3 C. buttermilk
  • 1/2 C. coconut flakes
  • 2 large eggs
  • 1 1/2 tsp. coconut extract
  • 1/2 C. chopped pecans
  • Coconut Butter:
  • 1 C. butter
  • 1/4 C. cream of coconut

Preheat oven to 325 degrees F. Spray bottoms of two 9 x 5 x 3-inch loaf pans. Mix all dry ingredients together. Add buttermilk, oil, coconut, eggs, coconut extract and nuts. Mix well with electric mixer. Bake 1 hour. For butter: Mix with electric mixer until fluffy. Serve with coconut bread.
