Coconut Bread with Coconut Butter
Ingredients
- 2 C. all-purpose flour
- 1 3/4 tsp. baking powder
- 1/4 tsp. salt
- 1 1/3 C. granulated sugar
- 1/4 tsp. baking soda
- 2/3 C. vegetable oil
- 2/3 C. buttermilk
- 1/2 C. coconut flakes
- 2 large eggs
- 1 1/2 tsp. coconut extract
- 1/2 C. chopped pecans
- Coconut Butter:
- 1 C. butter
- 1/4 C. cream of coconut
Directions
Preheat oven to 325 degrees F. Spray bottoms of two 9 x 5 x 3-inch loaf pans. Mix all dry ingredients together. Add buttermilk, oil, coconut, eggs, coconut extract and nuts. Mix well with electric mixer. Bake 1 hour. For butter: Mix with electric mixer until fluffy. Serve with coconut bread.Â
