  • 1/3 C. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 large eggs, beaten
  • 3/4 C. Panko bread crumbs
  • 1 C. sweetened shredded coconut
  • 1 lb. raw large shrimp, peeled and deveined

Mix the flour, salt, and pepper in one bowl. Beat the eggs in a second bowl. Last, mix the Panko and coconut in another bowl. Dip each shrimp in the flour, then eggs, and finally the Panko. Add enough oil to cover the bottom of a large skillet. Fry the shrimp in batches for about 2 minutes each. Drain the shrimp on papers towels and serve with chili sauce.
