Coconut Cashew Crunchers
Ingredients
- 1 C. brown sugar
- 1 C. granulated sugar
- 1 C. butter or margarine; softened
- 1 tsp. vanilla
- 1 egg
- 2 1/2 C. all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 C. flaked coconut
- 1 1/2 C. chopped cashews
Directions
Heat oven to 350 degrees. Beat sugars, Butter, vanilla and egg in a large bowl with electric mixer on medium speed, or mix with a spoon until creamy. Stir in flour, baking soda and salt. Stir in coconut and cashews. Drop dough by 1/4 cupfuls about 3 inches apart onto an ungreased baking sheets; flatten slightly. Bake 12-16 minutes or until edges are golden brown. Cool 2 minutes; remove from cookie sheet to wire rack.
Yield: 2 dozen cookies
