Ingredients
- 2 C. sugar
- 1/2 C. butter
- 2 egg yolks
- 1 C. almond milk
- 2 1/2 C. whole wheat flour
- 2 1/2 tsp. baking powder
- 1 C. coconut flakes
- 1 tsp. cinnamon
- 1/4 tsp. paprika
- 1/4 tsp. chili powder
- 2 tsp. grapefruit juice
- 1 tsp. almond extract
- 3 egg whites, beaten
- 1/2 C. whole wheat flour
- 1 C. almond milk
- 3/4 C. sugar
- 1/2 C. butter
- 1 tsp. almond extract
- 2 Tbs. grapefruit zest
- 1 tsp. cinnamon
- 1 tsp. allspice
Directions
In a large bowl, mix 2 cups sugar and 1/2 cup butter. Add 2 egg yolks; beat well. Combine almond milk with coconut flakes, cinnamon, paprika, chili powder, flour, and baking powder. Add almond extract, grapefruit juice and egg whites; beat well. Spray a 9x13-inch pan with nonstick baking spray. Transfer batter into pan. Bake for 30 minutes at 350 degrees.
For Frosting: Combine 1/2 cup whole wheat flour and 1 cup almond milk in a saucepan, then cook mixture until thick. Remove from heat and set aside to cool. Beat 1 cup sugar and butter until fluffy with mixer. Add cooled flour and milk mixture; beat well. Stir in almond extract, cinnamon, grapefruit zest and allspice. Enjoy!
